Lemon Cupcakes

This week I've been making Lemon Cupcakes for one of my aunts, I love the tangy zesty flavour of lemon and love it even more in cake form! This recipe is so quick and easy, they can be whipped up in less than an hour, look good and taste great.



Ingredients

For the cake you will need
250g caster sugar
250g butter
250g self raising flour
1tsp baking powder
4 eggs
2-4 tsp lemon juice (more if using fresh lemons)

For the lemon glaze
25g caster sugar
25ml water
juice of 1 lemon (approx 25ml if using lemon juice)

For the butter icing
250g icing sugar
80g butter
100g lemon curd

Method

Preheat the oven to 190 degrees
Place all cake ingredients in a mixing bowl and beat with an electric mixer for 2 minutes until all combined.
Spoon into cake cakes filling each one 3/4 full
bake for 15-20 minutes until risen and golden in colour

When the cakes have cooled take a cocktail stick and pierce tiny holes in to the cake 
in a small pan place the sugar, water and lemon juice, bring to the boil and once all sugar has dissolved take off the heat and leave to cool
Using a pastry brush generously brush the glaze over each cake

to make the butter cream icing place the butter, icing sugar and lemon curd into a mixing bowl and beat for 5 minutes until the butter cream is smooth, glossy and pale.
spoon into a piping bag and swirl on to the cupcakes.
finish off with a decoration of your choice, I went with a jelly lemon slice.
